@Sophie Sure. Finely chopped onion, grated carrot and courgette all fried in olive oil -- take off heat and let cool. Put in a bowl with pre-soaked, drained lentils; splash of soy sauce and breadcrumbs. (Optional for vegans: add beaten egg). Add a little water and finely-chopped fresh herbs. Let sit for an hour.

Form into patties coating with gram flour. Fry in sunflower oil.

I don't really do quantities -- I cook largely by eye and feel.

And it's a variable recipe -- you can substitute what veg you use, or pulses for crushed nuts and/or seeds. The important thing  is to make all the ingredients small. The patties are less likely to break apart when frying.

Sounds very very yumm, even though we just had lunch :laughing:  .

So no need to pre-cook the lentils? Just soaking them is enough?

Depends how much crunch you want. These were part cooked.

did the patties stick together well?  I just tried some veggie-burgers a few days ago but they tended to crumble easily.  My recipe was similar to yours but I did not grate carrots or courgettes

Egg and gram flour are good for that. I also leave the mixture to sit after mixing for a couple of hours if I can -- that seems to help.
